Easy Eggplant

I just made a quick and easy lunch, because quite frankly, who has patience to make a lunch that isn’t quick and easy?

You will need an eggplant, olive oil, lemon or lime,  & salt and pepper.

Slice the eggplant – not too thick, but not too thin.  Lay out the pieces on a baking pan.  You can use the oven or toaster oven.

In a bowl create a mixture of oil and lemon juice (or lime).  Mix together and brush on the eggplant.

Sprinkle with salt and pepper.

Pop into the oven/ toaster oven on 375 for about 20-25 minutes.  Tops should be blackened, but not burned.

Shove into mouth.

Delish!
