My Go To Sandwich

I am currently coming off of a peanut butter eating binge, which has lasted for somewhere between six months and two years.  I was eating it at least four or five days a week:  on bread, as a sauce for pasta (and other things), and by itself out of the jar.  I get into these routines where I will eat the same thing over and over again and not get sick of it.  I love peanut butter.  But, I will be reducing my consumption to one or two days a week, as it is high in fat and highly addictive.  Summer (might) be coming soon and I’ll have to wear a bathing suit.  I don’t want my butt hanging out too much.

Anyway, my new obsession is a sandwich.  It is also very delicious, but healthier than Smuckers Natural Peanut Butter and Earth Balance Buttery Spread slathered on pieces of bread.

Here it is:

Ciabatta Bread – toasted (I use Orlando brand)

Vegenaise Spread (mayonnaise for vegans)

1/3 of an avocado

Tomato – 2 or 3 slices

Organic Smoky Tempeh Strips (Fakin’ Bacon by Lightlife)

Optional: salt and pepper, basil leaves

It’s so yummy and it’s easy to make.  What’s your go to meal?

  2. Oh… the photo sells the sandwich! I need this. My go-to sandwich has always been Jif peanut butter and Smuckers grape jelly — but on 15-grain bread, if that helps balance out all those calories and fat. Clearly, a change is in order at my house. Please keep sharing recipes – and photos!
